I've had to be really conscious about my food and eating healthy this year as I'm currently on the road more than 100kms a day for work. Then I've got to contribute my brain power and then some! Here are some of my common go tos.
I have no idea what this is called. Cooking by instincts. Chicken broth mixed with a yoghurt base, with left over chicken, chickpeas, garlic and olive oil, topped with paprika and any herbs on hand (in which I had none...)
This just keeps my tummy so happy. Plain yoghurt with strawberries and roasted nuts. Love it with dates and honey as well. Anything that seems sane with yoghurt I eat.
Usual sides... carrot and parsley, and tomato, cucumber and red onion salads dressed in olive oil, lemon and salt. garlic yoghurt sauce (crushed garlic, olive oil, salt, pinch of cumin, yoghurt whisked together). There's a strong yoghurt theme in my house... my husband's completely over it I'm sure, but hes all over salad. Its a tad strange... but good!
And in case things got way too healthy for moment...
Easy apple pie. I poach apples brown sugar butter cinnamon and nutmeg with a couple of table spoons of water and use ready made puff pastry. (Then I spill icing sugar all over it in true form...)
And these are my little cardamon donut biscuits. Still playing around with this recipe. I made a mistake of serving this to the men first. It doesnt make it round to ladies... :S.
